Bube’s Brewery Dining and Entertainment has announced that they are ready for some changes. They have a new executive chef, established new menus, developed new entertainment venues and have appointed a new operations manager, Dustin Wilcox.
Wilcox, a North Carolina native, has more than 11 years of industry management experience. He has managed at all levels and has gained exceptional hands on experience in training and managing restaurant staff. Proficient in cost management and driving restaurant sales, Wilcox is also credited with the conception and design of innovative menus and beverage standards, creative marketing programs, guest and community relations and Health Department compliance. Wilcox will supervise 50,000 square feet of dedicated restaurants, Victorian saloons, private event dining, catering and a historic brewery.

Wilcox’s management experience will help him direct daily restaurant operations, deliver superior food and beverage service and maximize customer satisfaction as wellas his ability to collaborate with Allen.

In addition to enhancing the guest experience, Wilcox, together with his executive staff, will also be focusing on positioning Bube’s as a major LancasterCounty attraction. Plans for winter 2019 include excavation of Bube’s caves in search of clues that may relate to the Underground Railroad, strengthening Bube’s prominence as a national landmark and establishing new and entertaining events such as “The First Annual Beard and Mustache Competition,” “A Night on Bourbon Street Burlesque Show,” “Tarantino Theme Party,” Indoor Beach Party, Valentine’s week special events and more.
Bube’s Brewery Dining and Entertainment, at 102 N. Market St. in Mount Joy, is an intact historic 19th century brewery and museum complex. It has been featured on the Travel Channel, NPR radio, several local publications and is listed as one of the “10 best restaurants worth the drive from Philadelphia” by Eater Philadelphia. Bube’s is listed twice on the National Register of Historic Places.
